Summer truffle, also known as “scorzone” for his coarse and verrucous skin, is the strongest of all truffles. It is widely used for culinary purposes and as base in preserved truffle products. Its perfume is more subtle compared to white truffles,but still very versatile in the kitchen. Indeed, summer truffles release their fragrance especially when cooked.
